Creamy Herbed Chicken

3-4 chicken breasts
1 bottle bleu cheese dressing
1tsp oregano
1tsp rosemary
1/2tsp cumin
1tbsp basil
1tsp garlic powder
1/4c grated parmesan
2tsp dijon mustard

Mix dressing and all sauce ingredients together. Pour over chicken in baking pan and bake at 350 about 45 minutes, or until chicken is done through.
 
Thank you all for the recipes. I have a limited type & amount of food I can have - no raw (meaning salads, nuts, vegetables), little to no dairy (excluding eggs, however, those digest alright), no fast food, no red meat. Yeah, I know - so what DO you eat, WG? Roasted vegetables, rice, baked turkey/chicken, whole wheat bread, almond milk with unsweetened cereal. For a snack I have fruit - even though it's raw, it stays down and digests well - which is terrific since I truly do enjoy oranges, grapefruit, berries of any sort, too.
Now with these restrictions try to go to a restaurant and order from the menu. Not fun. It's a chore so we normally stay home. I do know how to cook and like being in the kitchen - I make homemade desserts so I know what went into them, our own soups & chili. It's not totally bleak, but it's just a challenge, that's all.
My wife had a stroke in April so I have re-kindled my cooking skills. She can't negotiate stairs so I do the laundry, I do the shopping since she now cannot drive - that also means taking her to her follow-up doctor's appointments. I clean weekly, maintain our vehicles and every other week I mow the lawn - good thing I'm retired or I would have wanted to hire someone - or just stand in the middle of the street and shout my lungs out!
 
I've always considered myself lucky that I don't have any food allergies or sensitivities that I'm aware of. Considering that I always seem to be at odds with my digestive system there might be something there I don't know about.
 
Southwestern Pasta

8oz rotini cooked
1lb ground beef
1 can corn
1 bag onion and pepper stir fry
1 large jar salsa con queso

Brown beef. Add remaining ingredients and simmer for a few minutes.
 
Parmesan Chicken

1c bread crumbs
1c grated parmesan
1tbsp basil
2tsp garlic powder
3-6 chicken breasts
1/4c milk

Combine bread crumbs, parmesan, and spices. Dip chicken in milk and roll in coating. Place chicken in greased baking pan and bake at 350 45-50 minutes.
 
Cheesy Taco Bake

4 flour tortillas
1lb ground beef
1 envelope taco seasoning
1 jar salsa con queso
1 bag kraft 4 cheese mexican blend

Brown beef. Mix in taco seasoning and salsa con queso. Put 2 tortillas on the bottom of a greased 9x13 baking dish. Spread beef mixture over top. Put other 2 tortillas over beef and top with cheese. Bake at 350 15 minutes.
 
Beef Tips

1lb stew meat
1/2c red wine
3tbsp soy sauce
1 1/2tsp sugar
2tsp ginger
6oz jar sliced mushrooms w/ liquid

Put everything in slow cooker. Cook on high about 4 hours.
 
Cabbage Roll Casserole

1lb ground beef
2 medium diced onions
1 1/2tsp garlic powder
1 can tomato sauce
1tsp thyme
1/2tsp ground sage
1/4tsp pepper
1/4tsp cayenne
3/4c rice cooked
1 pouch bacon bits
1 bag coleslaw mix
1c shredded mozzarella

Brown beef. Add tomato sauce, onions, spices, and bacon. In a greased 9x13 baking pan mix beef mixture, rice, coleslaw mix, and mozzarella. Bake at 375 35 minutes.
 
Sweet Potato Pie

9" pie shell
1 large can sweet potatoes
1/4c butter
1 can sweetened condensed milk
2tsp grated orange peel
1tsp vanilla
1tsp cinnamon
1tsp nutmeg
1/2tsp salt
2 eggs

Cream together sweet potatoes and butter. Mix in remaining ingredients. Pour into pie shell and bake at 350 30 minutes.

Topping

1 egg
3tbsp brown sugar
1tbsp butter
1tsp maple syrup
1c chopped pecans

Mix together topping ingredients. Remove pie from oven and spread on topping. Bake pie another 15 minutes.
 
Russian Chicken

2-4 chicken breasts
1 jar apricot preserves
1 bottle Russian dressing

Heat preserves in a small sauce pan until melted and liquid. Mix in dressing. Pour sauce over chicken in baking pan and bake until chicken is done through.
 
Chicken ala GW

4tbsp butter
1c cream
1/2c chicken broth
1tsp salt
1tsp chili powder
1 bag onion and pepper stir fry
1lb diced chicken breast
1/2c grated parmesan
1c chopped spinach
4tbsp flour

Melt butter in skillet. Add everything but flour. Bring to a boil and let simmer 5 minutes, stirring occasionally. Mix in the flour well and simmer another 5 minutes. Serve over cooked egg noodles.
 
Balsamic Pork Chop Marinade/Sauce

1c ketchup
1c balsamic vinegar
2tsp garlic powder
1/2c brown sugar
1tbsp + 1 1/2tsp Worcestershire sauce
 
Bacon Ranch Chicken

4 chicken breasts
2c sour cream
1pkg dry ranch seasoning mix
raw bacon strips, 8-12
1c shredded cheddar

Wrap chicken breasts with bacon strips and lay out in a baking pan. Mix sour cream, ranch seasoning, and cheddar. Spread over chicken breasts and bake at 350 about 45 minutes.
 
Chicken Veronique

2tbsp butter
6oz jar sliced mushrooms
diced onion
1lb diced chicken breast
3tbsp flour
1c chicken broth
1/2c white wine
salt and pepper to taste
2tsp garlic powder
1c rice cooked

Melt butter in large skillet. Add mushrooms, onion, and chicken. Saute until onion is translucent. Pour in broth, wine, and spices. Stir in flour, and simmer until liquid thickens. Serve over rice.
 
Teriyaki Beef

1lb stew meat
1/2c soy sauce
1tsp ginger
1tbsp sugar
1tsp garlic powder
1c rice cooked

Put everything but rice in a slow cooker. Cook on high about 3 hours. Thicken liquid with flour and serve over rice.
 
Italian Beef

1lb stew meat
1c beef broth
2tbsp steak sauce
1 envelope Italian dressing mix
1/2tsp pepper
2tsp garlic powder
1tbsp onion powder

Mix everything together in a slow cooker. Cook on high 3-4 hours.
 
French Onion Pork Chops

4 boneless pork chops
1c beef broth
1 envelope onion soup mix
4tsp dijon mustard
1/2tsp thyme
1/4tsp pepper
4 slices provolone

Mix everything together but cheese. Put pork chops and liquid into a plastic bag and marinate several hours. Move both chops and liquid to a baking dish. Place a slice of cheese on top of each pork chop. Bake at 350 40 minutes.
 
Chicken Monteray

4-6 chicken breasts
1 bottle bbq sauce
8-18 slices bacon
2c shredded cheddar jack

Wrap bacon slices around chicken and place in baking pan. Mix bbq sauce and cheese, and spread over chicken. Cover and bake at 350 45-60 minutes, until chicken is done through.
