Thank you all for the recipes. I have a limited type & amount of food I can have - no raw (meaning salads, nuts, vegetables), little to no dairy (excluding eggs, however, those digest alright), no fast food, no red meat. Yeah, I know - so what DO you eat, WG? Roasted vegetables, rice, baked turkey/chicken, whole wheat bread, almond milk with unsweetened cereal. For a snack I have fruit - even though it's raw, it stays down and digests well - which is terrific since I truly do enjoy oranges, grapefruit, berries of any sort, too.
Now with these restrictions try to go to a restaurant and order from the menu. Not fun. It's a chore so we normally stay home. I do know how to cook and like being in the kitchen - I make homemade desserts so I know what went into them, our own soups & chili. It's not totally bleak, but it's just a challenge, that's all.
My wife had a stroke in April so I have re-kindled my cooking skills. She can't negotiate stairs so I do the laundry, I do the shopping since she now cannot drive - that also means taking her to her follow-up doctor's appointments. I clean weekly, maintain our vehicles and every other week I mow the lawn - good thing I'm retired or I would have wanted to hire someone - or just stand in the middle of the street and shout my lungs out!
